Creamy Macaroni and Cheese for Kids
Amount/Measure/Ingredient
1/2 pound elbow macaroni, cooked and drained per package
instructions
1 cup milk
1/2 cup light cream
2 tbsp. butter, soft
2 tbsp. flour
salt and ground white pepper to your taste
1 cup yellow American cheese, coarsely grated
1/2 cup mild cheddar cheese, coarsely grated
1 slice white bread
2 tbsp. grated parmesan cheese
3 tbsp. canola oil
1/2 tsp. paprika
Procedure:
This dish can be made in 3 easy steps and it doesn't
need to be baked!---
1. Heat the milk and cream to a simmer. While this is
happening, mix the butter with the flour to a smooth
paste. When the milk/cream is almost boiling, add the
butter/flour mixture and stir with a whisk until it all
boils and is slightly thick. At this point, turn off the
heat and add the cheeses, salt and pepper and stir until
the sauce is smooth. Cover and keep warm.
2. While the water, for cooking the pasta, is coming to
a boil; crumble and rub the piece of white bread between
your hands to make bread crumbs. Mix in the grated
cheese and paprika. In a frying pan, heat the oil and
then add the bread mixture and cook until it is lightly
toasted and slightly golden brown. Place in a small bowl
and set aside.
3. Cook the macaroni according to the package directions
or the way you like it cooked, drain and then add to the
cheese sauce. Stir to blend all together and heat to a
serving temperature that won't be too hot for your kids.
Serve the macaroni and cheese and sprinkle with a
teaspoon or so of the crunchy bread crumb mixture---your
kids will love this and you will too!
Notes*
White pepper is the inside center of a black peppercorn.
So ground black pepper is the whole berry and has the
black ground look when sprinkled on food. Ground white
doesn't have the black look so you don't see it when
sprinkled or added to food. In this and other dishes it
makes for a clean looking dish.
You may use margarine, low fat milk, low fat half and
half or low fat cheese in this recipe.
