3 cups 2% reduced-fat milk
1/4
cup dark brown sugar
2 ounces bittersweet chocolate,
chopped
1 tsp. vanilla extract
1/8 tsp salt
1/2 cup granulated sugar
1/3 cup unsweetened
cocoa
3 tbsp cornstarch
1 cups 2% reduced-fat
milk
3 large egg yolks, lightly beaten
Procedure:
In a few easy steps your done in 15
minutes!
Combine 3 cups of milk, brown sugar, chopped
bitter sugar, vanilla and salt and heat over low heat
until the chocolate is melted. Keep hot. While the
chocolate is melting in the milk, combine the granulated
sugar, cocoa and corn starch and sift into a bowl. Mix
the 3 egg yolks with 1 cup of cold milk, whisk to blend
well. Now combine the sifted cocoa mixture with the egg
yolk mixture. Pour 1/3 of they yolk mixture into the
cocoa, and stir until smooth, then add the remaining
yolk mixture and stir it in.
You are now ready to
make the pudding--- Your melted chocolate and milk
should be almost boiling. Take about 3/4 of a cup of
this hot mixture and pour it into the cool yolk mixture
to warm it slightly, then pour all of this yolk mixture
into the hot milk. Stir continusiully especially in the
corners of the pot until the mixture comes just to a
boil and is thick.
Pour into serving dishes and cool
slightly. When no longer hot, cover each dish with
plastic wrap and refrigerate until chilled, about 1
hour. The plastic wrap prevents a skin from forming on
on the pudding. Serve with whipped cream if you like.
